Almost a week in. In all honesty, this really hasn’t been that hard. I think the key is having enough things on hand. Lots of protein options, I think I bought too much in that regard, but just froze what we didn’t need this week, and will pull out as needed.
Didn’t sleep well last night. Tossed and turned all night…not sure why. I think maybe I stressed about closing out my kitchen next week. Once that is done, I feel like I can finally take a deep sigh and be done.
Am: Had a bit of a headache again today. Because I slept so poorly last night, I really struggled to get out of bed. Once up- I felt ok. My joints feel really good. Hooray!
Midday: I actually have a fair amount of energy today. Headache is mostly gone.
Evening: I’m starting to get a little tired but managed to do quite a bit of prep this afternoon.
Meal 1: Scrambled Eggs with Spinach, Strawberries, Roasted Potatoes.
Meal 2: Hamburger, Sautéed Brussels Sprouts, Sweeet Potatoes and Watermelon
Meal 3: Braised/Smoked Ribs, Sautéed Brussels Sprouts, Sweet Potato/Potato Medley.
