Here we are, day 1 of our second round of whole 30 and we couldn’t be more thrilled. I’m calling it 2.0 so I’ll be referring to it as that for reference on my blog as not to confused our round one.
My husband John is sharing this journey with me once again. We are both pushing ourselves harder than ever before. John is training for a 1/2 Ironman in June and I’m just looking to keep up with our four year old son. ?

I try to keep things really simple but this round I’ve decided to step up my recipe game, particularly with our dinners. Be sure to look for posts about various recipes we are trying and/developing.
My breakfast and lunch today were pretty straightforward. I used prepped ingredients from the weekend to make my breakfast and lunch today.
Breakfast: Sausage and scallions breakfast scramble with hashers.
Lunch: Kale Harvest Salad with roasted yams, albacore tuna, apples, shallots, scallions, olive oil, lemon juice, salt and pepper.
Dinner: Pan-Seared Salmon with Sautéed Green Beans with Shallot and Grape Tomatoes and Baked Potato
