Today should have been a great day for you. We are now over the hump and we are staying the course. If your sugar dragon should rear its ugly head, tell it to take a hike; go for a walk, drink some tea or water. There’s a good chance you might be dehydrated, so make sure you are consuming enough water.
It was a really exciting day for me today, my zoodler came via Amazon. Hooray! I’ve been eyeing “zoodles” on many of the Instagram feeds I follow and couldn’t wait to get my own. Tonight we tested it out with potatoes and made roasted “shoelace fries”. I have to say they were really good and very very easy. I think next time I would bump up the oven to 425 and roast about 15 minutes instead of the 10 minutes at 400 like I did.

Lunch: Late morning breakfast/lunch, leftover Herb Crusted Pork Tenderloin from last night with Roasted Winter Vegetables.
Dinner: Sear-Roasted Top Sirloin, Thyme-Mushrooms and Onions, Sauteed Asparagus, “Zoodle” Roasted Potatoes.
