Howdy friends. It’s the halfway point for our journey. How are you feeling today? Has the tiger blood kicked in yet?
Today was a run around day for me. I filled the day tying up loose ends tied up from closing my business last summer. It feels good to check those items off the to-do list.
Admittedly, I kind of scrambled for meals. My breakfast was really brunch and so I wasn’t hungry at lunch-time. In addition, our Amazon Fresh order got really messed up (missed three totes and sent us one of someone else’s). So my game was off.
What I keep hearing from my friends and followers of this blog and Instagram is that they want more recipes, and continued inspiration for meals. Behind the scenes, I’m working on just that. I want to first test the recipes for my family to see if they are “worthy” of putting them out there in the Ethernet. If I receive high ratings from my husband and son, you can bet they’ll be included on this page, as well as on my Instagram feed. Stay tuned for more recipes coming soon.
Breakfast/Lunch: Two Fried Eggs, Hash Browns, Mandarin Oranges.
Dinner: Pan Seared-Roasted Chicken Breast, Rosemary Roasted Potatoes, Asparagus, Mushroom and Red Onion Saute.
