Today was a RED LETTER DAY! I am on such a high. I got to meet Melissa Hartwig – Co-Creator of The Whole 30. Whoot! After reading the book last summer, and watching a few of her snap chats, videos, etc., I sort of had it in my mind that it would be fun to meet her sometime. Never in my wildest dreams did I think this would actually happen. Low and behold, she came to Seattle for a book tour of her most current release, The Whole 30 Cookbook . I got to meet her! In addition, my energy was through the roof today. I put in a really great workout, where I seemed to have endless energy, my skin is glowing and I’m feeling great. Meals were on track, too. TIGER BLOOD!
Breakfast: Two Fried Eggs, Paprika Hash Browns, Avocado and Strawberry.
Lunch: Mixed Greens and Kale Salad with Avocado, Tomato, Radishes, Roasted Chicken, Golden Beets and Grapes. You can eat out and still be Whole 30 compliant. I enjoyed this delicious salad yesterday at Joey Kitchen, University Village. I had them omit the corn, peas, cheese and dressing. Used lemon juice as dressing and it was outstanding.
Dinner: Sear-Roasted Dill Coho Salmon, Smashed Yukon Gold Potatoes with Thyme, Braised Brussels Sprouts.
The highlight of my day (maybe week, month or year!) meetings Whole 30 Co-Creator, Melissa Hartwig. She was kind, thoughtful and smart. Such a blessing to meet her in person. An amazing woman who has accomplished so much.
