Hi all, this week has been super busy for me and I apologize that I haven’t been sending daily posts. Rest assured my husband and I are still following the Whole 30 reset, I just haven’t had time to jot everything down in my blog.
My hope is that since you’ve been at this a while, you are feeling good about things and starting to really see some significant changes. Food choices should be verbatim at this point, you are reading labels, planning out your meals and making good choices when eating out.
Something I noticed this morning, only because I kept stabbing myself is how long my finger nails have become. You have to understand that I have never been blessed with strong finger nails, they have been paper thin my entire life. Low and behold, this morning, I accidentally scratched myself and it hurt. I looked down and my nails have grown like crazy. Just another NSV that I am enjoying. What are some things that you are noticing? Comment below.
With regard to our meals this week, in a perfect world we would be eating fancy pants meals at every stop, but that’s just not possible. I focus on making dinner time “food experiment” time where I test out new recipes on my family. This week has included travel and just a lot going on, so our meals have been a little of this and a little of that. And you know what? That’s okay. It’s life and as long as we are making healthy, compliant meal choices, I’m okay with not hitting it out of the park on every stop.
Here are a few meals that we’ve enjoyed these past few days. I will tell you we had one fail, so I’m not going to be posting that recipe until I tweak it to figure out what happened. It was a Beef Brisket that I made in our Instant Pot. It was super tough, which makes me think that either a.) I didn’t cook it long enough, b.) I cooked it too long or c.) I should have let the steam release on it’s own (for 15 minutes or so) instead of doing it manually. I’ve heard this can make meat tough.
Anyhoo- here’s what we’ve been up to the past couple of days:
Beef Brisket in the Instant Pot. Flavor was terrific…meat was super tough.
