“Today is going to be the best day of my life”. I heard this quoted yesterday from the 98 year old woman who has been featured in the Athleta catalog. She’s amazing…and bendy! She’s able to bend her body into beautiful yoga poses that make any die hard yogi stare in awe.
She starts her day off with a few mantras, she has been doing this for years apparently. One of them is the one I quoted above. What a lovely way to start the day, huh? I’ve added this mantra to my repertoire of mantras in an effort to start and finish my days with thankfulness and abundance.
We are nearing the end of our Whole 30 and I can tell you that I feel really really good. In fact so good that I’m planning another whole 30 after this one finishes. I may give myself one day to have a glass of wine (the one thing I am really only craving on this round and it’s few and far between). Anyone else with me?
I love weekends because I feel like I have a little more time to “play” in the kitchen and not the “quick get out the door” meal that is prepared on most weekdays.
Today I pulled out my spiralizer again…Made Sweet Potato Spiral Hashbrowns to go with my egg for breakfast. Will post the recipe over on my Whole 30 recipe pages.
Breakfast: Spiralized Sweet Potato Hashbrowns, Fried Egg
Lunch: Albacore Tuna Salad with Sweet Belle Peppers and Avocado.
Dinner: Grilled Mahi Mahi with Roasted Red Pepper Coulis, Roasted Herb Potatoes.
