Day 2 here of my mini reset and what did I discover within my first 10 minutes of waking? My almost 5 year old son wet the bed (he hasn’t done this in over a year or more) and my cat decided to throw up near the entrance to the bathroom. Lovely.
Two things learned here: This is small potatoes, my son had blimp on the post-potty training radar and my cat, well…not sure what to think about that but I’m sure glad I didn’t step into it in my pre-coffee haze. And…I refuse to let the be a sign of how the day is going to go.
Things are clicking along nicely with my mini reset. Aside from the bed wetting and cat throw up – sleep was amazing last night. I fell asleep listening to a podcast and put in almost 9 hours of pretty solid sleep, waking up feeling well rested.
Dinner was a snap and so delicious last night. I didn’t have to worry about shopping because I knew my Sun Basket meals were on their way. My husband and I have been using the Sun Basket meal service for about 2 months now and we love it. Last night we enjoyed another great Sun Basket meal, Salmon with Spring Vegetables and Piquillo-Almond Salsa. You guys, if you haven’t checked out Sun Basket and are struggling with what to put on the dinner table each week, I highly recommend this service. The best part? I think it is comparable or has maybe even cut our food expenses down a little bit because there is no waste.
Having owned a home meal delivery service myself, I feel pretty attuned to what people are saying about weeknight meal prep relief. What’s in store the rest of the day? I am in the kitchen cooking – on the docket? Instant Pot Chili! I’ve wanted to create a down-home-style chili with easy to access ingredients and ease in use using the Instant Pot. So, I’ll be playing around with that today. Stay tuned for updates. 🙂
