Day One of our Round 3 Whole30 Reset. John and I are so excited to be on this journey once again. 2017 was an amazing year filled with personal bests and growth; John competed in a half Iron Man competition in Victoria, BC and I started a new career with Beautycounter, an education first, toxic free skincare and beauty company. I also received a new hip in August which has significantly changed my outlook on life. I can move again! Hooray!
With that being said, we are human and have “let things go” in the health department. For the past 4-5 months, we have not been as diligent with our workouts and clean eating plan. We can both feel it, in added pounds and sluggishness. We are not going to let this slip define us, but rather use it as a learning tool and move forward. Today is a new day, a new year and we are PUMPED and ready to go.
Originally, we were going to start our Whole30 reset tomorrow, but realized we both had commitments at the end of the month and so today was a better day to start, as hard as it is being up late celebrating last night.
John is jumping into the icy waters of Puget Sound in about an hour, I will be there moral support (heck no am I jumping in …).
In preparation for this round of Whole30, I did some shopping at Trader Joe’s yesterday and stocked up on compliant items. Here is a list of great finds at Trader Joe’s, as well as Costco, Whole Foods and a few other spots from Kelsey over at Little Bits Of. This list is a great resource to carry with you on those trips.
I’ve prepped my pantry, cleared out the junk (mostly), dumped the egg nog and have chopped, prepped, roasted and boiled some grab and go items such as:
- Hard boiled eggs (great for a quick breakfast, snack or made into egg salad
- Chopped veggies; bell peppers, onions, tomatoes, kale, green onions, etc.
- Roasted potatoes for quick sautes or added to breakfast scrambles
- Boiled baby potatoes for smashed potatoes, potato salad, a quick side, etc.
I am jumping on the scale right after I post this (Ahhh!) and will take before pictures. Remember, no stepping the scale for 30 days.
