Good Morning, Whole30ers!
Today is Day 2 of our 3rd round of Whole30 and I’m feeling super motivated and excited for what’s to come.
What have I been working on? Fridge is cleaned out of any looming items leftover from the holidays (cream, egg nog, cheese) and produce is prepped and ready for grab and go.
How am I feeling? Energy is good, I slept relatively well last night, I wouldn’t say I am bouncing with energy but I definitely don’t feel weighed down, like many mornings the past few months. Here is a handy little chart that I have seen floating around, which gives you a visual of how you will feel on the Whole30, day by day.
Speaking of day by day, have any of you picked up Melissa Hartwig’s newest book, Day by Day? I ordered it last week, too late to receive it on the first day of my Whole30, but I understand it will be here on the 4th. For now, I’m just documenting in my journal and will move over to the book when it arrives. I think this will be a handy little tool, I’m excited to give it a try.
To assist with recipe planning this round, I’m relying on three things:
- Grab and Go items from the fridge for quick meals
- Recipes from both the Whole30 Cookbook and the new Whole30 cookbook, Fast and Easy
- Box meal kits from Sunbasket and Blue Apron.
What’s on the menu today?
Breakfast: Egg/Veggie Scramble with Smashed Potatoes and Avocado
Lunch: Charlie and I were on the go today, I brought an RX Bar which held me over until we got home. Had two hard boiled eggs with Trader Joe’s Everything Bagel seasoning.
Dinner: Sunbasket Manila Chicken with Mashed Sweet Potatoes
It’s now after dinner, which was really delicious by the way. Be sure to watch my Insta-Stories on Instagram – Beyond the Kitchen Door as I recap my day there.
We are going into the time when I would normally have a little treat and it’s definitely calling my name BUT, I am going to make myself a nice cup of chamomile tea, do a facial detox mask (Beautycounter No. 3 Balancing) and forget about it. 🙂
Tomorrow is Charlie’s first day back to school and while it’s been nice having him home, I’m looking forward to a little mommy time.
See you manana!
