Hello and welcome to day three!
How are you feeling today?
So far so good for me, I didn’t have the best night’s sleep last night. I think I was anxious for sending Charlie off to school this morning. He was anxious as well about going back and somewhat dreading the drop off this morning.
However, as they morning progressed, we talked through some things and worked out why he was feeling nervous. Once we established which friends he would like to see and what fun activities he would be likely doing at school, his mood changed. He actually wanted to race me to the classroom…?
Meanwhile, back at home, I’m catching up on all things mom duty. Cleaning, laundry, dishes and a shower. 🙂
For breakfast this morning, I pulled some pre-chopped veggies out of the fridge and sauteed them up with some sliced sausage, then made an egg scramble with them. In another pan, I made a batch of hash browns. I love the Cascadian Farms Hash Browns. They’re frozen and only contain potatoes as the ingredient, great for an easy breakfast.
For lunch today, I made up one of our Sunbasket meals, that was actually a soup. Turkey Albondigas Soup with Cauliflower and Mole Poblano. It was fantastic, warm and filling.
Dinner was delicious too; Sunbasket Salmon with Roasted New Potatoes and Charred Broccoli. I just omitted the Greek yogurt that was supposed to top the salmon to make it compliant.
I’m going to turn in early tonight. As mentioned above, I didn’t get the best of sleep last night an I can really feel it.
