Welcome to Day 4!
By now you are starting to get the hang of things, right? Or maybe you are thinking, “Why the heck am I doing this?”. Stay the course, I promise it will pay off. Keep those prepped items stocked in your fridge, grab and go items ready to go and pantry stocked with essentials. Drink water. Breathe.
Last night I went to bed at 8:30. Crack the granny jokes, it’s okay. I was so exhausted from the last night, not getting much sleep at all, I really needed to settle in and get some Zzzs, after finishing Season 2 of The Crown, though. Priorities.
I slept SO well last night, almost the whole night through, which is amazing for me. This morning I woke up refreshed and ready to get out of bed at 6am. It didn’t feel early, it just felt like the right time to get up and get moving.
For breakfast this morning I made and omelette filled with sausage, peppers and onions served with smashed potatoes and salsa.
Lunch was a grilled chicken salad with roasted potatoes, avocado and Primal Kitchens Caesar Dressing.
Snack was two hard boiled eggs.
For dinner we enjoyed a Sunbasket meal; Seared Steak with Romesco and Kale-Artichoke Salad. The steak was fantastic as was the romesco sauce. I didn’t care for the salad, sadly. It wasn’t filling and the baby kale was not my favorite, too bitter. I knew we would both still be hungry so I boiled off the diced sweet potatoes in the fridge and mashed them with the leftover coconut cream. Delicious and did the trick to add some “bulk” to this meal.
In the mail today, came my copy of Whole30, Day by Day. It’s fantastic. I highly recommend. If offers a place to journal your day as well as provides great tips and tricks for each day of your Whole30; how you might be feeling, how to get over the slump, etc.
I have a trip planned tomorrow (Friday) to Pullman. I am a volunteer advisor for my sorority at WSU and I’m thrilled to be back with my team. However, traveling while on the Whole30 throws a wrench into things. It’s certainly not impossible, just challenging and like many things on Whole30, lots of preparation needed.
I’ve got my smaller cooler packed with: hard boiled eggs, a salad, dressing, almond butter and sliced apples, almonds, Rx Bars, and some dried meat sticks. It’s only for about 24 hours, so I know I can make it through.
