Hooray! We are out of the woods as far as the “Hardest Days”. Good grief. I had significantly more energy, my joints were moving better and I just felt like being more active, despite that fact that Charlie was home sick again today. Boo, but it did give me another day to get caught up with things around the house.
I’m really trying to focus on NSVs today. The bloat has gone way down, my pants are fitting looser, I am finding joy in things I haven’t for a long time and I don’t feel so stressed out and wound up. Even my parenting doesn’t feel as frazzled.
I’m sure putting the hash browns through their paces. Enjoyed those again this morning for breakfast with two fried eggs. Monotonous yes, but also delicious. I made up for it on my next two meals today.
One thing I can say is even with the meal prep kits we have been using, I am certain we are saving food costs this month. We have eaten at home every night since starting, with the exception of my trip over to Pullman. Win win, but I do miss a good meal out. Especially if it includes wine. Sigh.
For lunch, I wanted to whip up something different, utilizing what I had prepped in the fridge. I pulled together some julienned bell peppers, broccoli florets, roasted chicken and garlic with some curry paste and coconut milk. Served with sauteed cauliflower rice, for the win. It was super delicious.
For dinner tonight, we enjoyed our last meal kit this week from Blue Apron. Mexican-Spiced Barramundi with Kale, Sweet Potato and Avocado Salad. Really really good and filling.
Looking forward to the weekend and hopefully getting out of the house. Even if it does mean an outing to the grocery store.
