Something that dawned on me today…I haven’t had heartburn in about 5 or more days. Now that’s a NSV I can wrap my brain around. As someone who suffers from heartburn daily, especially at night, and someone who pops tums several times a day (all of this started during my pregnancy 5 years ago), I can’t believe I haven’t taken a single tums since starting this round of Whole30.
After getting Charlie settled with breakfast I headed out on a quick walk around our neighborhood. It was the first time I was out of our since Wednesday. Yikes. It was refreshing to feel the air on my skin and a bit of sunshine peeking through the clouds. Most importantly, I got some time for me, alone, with my own thoughts for about 30 minutes. I got back home and felt a new sense of purpose and strength. While I’m still waiting for my tiger blood to kick in (soon, very soon I hope), I did feel better today.
For breakfast this morning, I enjoyed…you guessed it, smashed potatoes and two fried eggs!
For lunch, sorry, I forgot to snap a picture, was a stir fry of roasted yams, broccoli and some diced up compliant sausage.
Dinner tonight was actually really satisfying. We enjoyed herb roasted pork tenderloin (I’ll explain below how I made it) with smashed sweet potatoes and steamed broccoli.
For the pork tenderloin, I took one whole tenderloin (about 1.5 pounds). Seasoned it with salt and pepper. Rubbed Dijon mustard on it and covered it with chopped fresh thyme and parsley. I then pan seared each side for about 2 minutes and slid it into a preheated 375 degree oven for about 20-25 minutes, until the internal temp reached 140. I pulled it out and let it rest for about 5 minutes and then sliced into medallions. I wish I had better lighting, the picture doesn’t do it justice.
