The halfway point. We made it! Tiger blood is on the horizon and we are feeling great!
Today in Seattle it was a beautiful, sunny and warm winter day. The past few days have been so lovely here, blue skies and sunshine. Not typical this time of year but welcomed.
It’s funny, when the sun comes out here, especially in the winter when it’s not expected, people come out of the wood works. They are smiling, the Seattle Freeze thaws a bit and there is an overall abundance of joy floating around. Sadly, it won’t last as rain is in the forecast, but we certainly enjoyed it while it lasted.
Other than the knocking headache I endured today (?), I felt great. I had bounds of energy, strength and endurance for the day’s activities. I will admit, however, that I was a tad bit sore from yesterday’s walk. Sad I know but it felt good to feel muscles I forgot I had.
Charlie and I were out and about today starting at a local park and then heading up to meet friends a children’s museum up north. I didn’t plan well for myself and didn’t bring any compliant snacks with me so I had to rely on my breakfast to carry me through until we got home around 3pm. Not smart I know but sometimes you just have to roll with the punches.
For breakfast, the usual hash browns and eggs.
For a late lunch when we got home; sauteed sausage and sweet potato scramble. I just grabbed whatever I could find that was ready to go in the fridge when we got home as I was really hungry at that point.
Our Sunbasket was waiting for us when we got home from our activities so I had the goods to make a great dinner. We enjoyed the Pan-Seared Steak with Ajvar Red Pepper Relish and Watercress. It was delicious. I did end up roasting some sweet potatoes to accompany it as it was a relatively “light” meal.
One of these days I will do a post on our thoughts about the different meal kit services; Blue Apron, Sunbasket and Hello Fresh.
