Hooray for Saturday! John is coaching the PeeWee Basketball program at the Laurelhurst Elementary Gym through the Seattle Parks and Recreation this winter. The class is for 3-5 year old kiddos, so you can imagine the entertainment factor of these little tikes trying to grasp the concept. Fortunately, there is a lot of parent help and guidance.
I completely spaced on eating breakfast this morning. As we were running out the door I grabbed a Larabar, just in case. I knew after basketball I was meeting up with a friend to talk about Beautycounter, and so this bar became my breakfast on the way over to her house.
Arriving home after 1 pm, I was definitely ready for lunch. Thank goodness for those quick prep go to meals that I can throw together in minutes. This lunch was a similar repeat to one a few days ago, chicken sausage, kale and red bell pepper saute. I forgot to snap a picture.
For dinner tonight, we enjoyed taco salads. This was another really quick recipe that I threw together after we got home from mass. Charlie was requesting movie night and so I needed something that would come together in 15 minutes or so.
What I did: Browned ground beef seasoned with cumin, coriander, garlic powder, salt and pepper and chili powder. Sauteed sweet bell peppers and onions. Diced tomato, diced avocado, prepared guacamole (from Whole Foods), salsa, mixed greens. Bam, it was on the table and we enjoyed a delicious dinner before heading down to the TV (aka movie theater).
