Chicken with Quinoa, Spinach and Roasted Tomatoes

A healthy chicken dish that’s great all year around

We eat a lot of quinoa in our house. It’s healthy, offering more nutrients that straight up white rice. Plus, it’s delicious, easy to prepare and versatile.

This dish comes together relatively quickly. It’s super flavorful and is pretty enough to entertain guests.

Chicken with Quinoa, Spinach and Roasted Tomatoes

A delicious and beautiful dish, fancy enough for dinner guests.

Ingredients:

  • 4 boneless, skinless chicken breasts
  • kosher salt and black pepper
  • 2 T dried basil, divided
  • 3 T avocado oil, divided
  • 1 cup cherry tomatoes, whole
  • 1 yellow onion, small dice
  • 1 garlic clove, minced
  • 1/4 cup white wine
  • 2 cups chicken stock
  • 1 cup quinoa
  • 5 oz baby spinach
  • 2 bunches fresh basil

Instructions:

  1. Preheat oven to 375 degrees. Be sure you have a lid large enough to cover skillet, if not, a sheet pan or foil will work.
  2. Season the chicken breasts generously with salt and pepper and 1 T of dried basil.
  3. Heat large skillet over medium-high heat.  Add 2 T oil. When the oil is shimmering, add chicken breasts, top side down, and sear for 4 minutes, reducing the heat to medium.
  4. Turn chicken breasts over and sear another 2-3 minutes.
  5. Remove chicken from pan and transfer to a parchment or foil-lined sheet pan.
  6. Toss tomatoes with remaining oil, season with salt and pepper, and remaining T dried basil.
  7. Add tomatoes to a sheet pan with chicken and roast for 10-12 minutes.
  8. Meanwhile, add onion and garlic clove to skillet. Add wine and scrape to pick up and brown fond on the bottom of the pan. (This will add lots of flavor to your dish).
  9. When onions have sweated down about 5 minutes, add stock and quinoa. Bring to a boil and then cover with a lid. Turn heat to low and simmer for 15 minutes.
  10. Remove lid and add spinach. Season with salt and pepper. Replace lid and let steam.
  11. Toss tomatoes with quinoa/spinach mixture.
  12. Plate quinoa in serving dish. Top with chicken. Garnish with fresh basil.
