Smoked Salmon Canapés

EASY YET IMPRESSIVE

I bring these tasty canapés to parties a lot and they go over really well. They’re fairly easy to put together, don’t have a lot of ingredient yet are beautiful to look at. If you are following the WW plan, they are zero points. How great is that?

Prep time: 20 MCook time: Total time: 20 M

Ingredients:

  • 1 English cucumber
  • 12 oz smoked salmon (lox)
  • 1 package fresh dill, half chopped and half left as sprigs for garnish.
  • 1 oz package nonfat plain yogurt
  • 1 lemon, zested and juiced
  • kosher salt and black pepper to taste

Instructions:

  1. Wash cucumber, cut off both ends to create a flat base. Using a peeler, peel four strips of skin off, on each side of the cucumber to create an alternating striped pattern. Cut the cucumber into 1/4" rounds.
  2. Remove salmon from packaging and slice in 2" strips.
  3. In a medium bowl, combine chopped dill, yogurt, lemon zest and juice, salt, and pepper to taste.
  4. Roll salmon slice on a diagonal, place on top of cucumber round. Continue until all salmon has been placed on rounds.
  5. Next, place a dollop of yogurt sauce on top of each slice of salmon. Garnish with a dill sprig.
