Boiled Baby Red Potatoes with Parsley

Boiled Baby Red Potatoes

Boiled Baby Red Potatoes

A fast and easy side dish to throw together. Bonus, it's Whole30 compliant.
Prep time: 10 MCook time: 12 MTotal time: 22 M

Ingredients:

  • 1 lb. baby red potatoes washed and halved
  • kosher salt and pepper
  • olive oil for drizzling
  • 1/4 cup Italian parsley, roughly chopped

Instructions:

  1. In a large saucepan or small stockpot, add potatoes. Add enough water to cover the potatoes and a large few pinches of salt.
  2. Place over high heat and bring to a boil. Once boiling, lower heat to medium-low and set time for 8-10 minutes until potatoes are cooked through but still firm and the skins are intact.
  3. Remove from the heat and drain completely.
  4. Add a good drizzle of olive oil to the pan and toss the potatoes to coat them.
  5. Add salt and pepper to taste.
  6. Place potatoes in a serving bowl and garnish with parsley.
