Caprese Chicken

A FAMILY FAVORITE

I absolutely love fresh basil and tomatoes.  Together, these two ingredients scream summer to me.  When the weather starts to warm and heirloom tomatoes become available, I jump at the chance to create anything with them.

In this dish, I have combined the classic ingredients; basil, tomatoes, olive oil, balsamic vinegar, salt and pepper.  I even took it a step further and added *ciliegine, fresh mozzarella balls.  This fresh tomato salad is the perfect accompaniment to chicken.  In this dish, I sear-roasted the chicken but you could easily grill it for an even more classic summer-time meal.

Please note:  To make this dish Whole30 compliant, omit the mozzarella.

 
Be sure to sliced the tomatoes in half lengthwise so you can see their pretty centers.

Here I used fresh organic cherry tomatoes but as the heirlooms start to appear, I would suggest using those for their sweetness.

Caprese Chicken

Caprese Chicken

This is a delicious chicken recipe. Great for summertime entertaining or for getting a quick meal on the table for your family.
Prep time: 10 MCook time: 20 MTotal time: 30 M

Ingredients:

  • 4 whole boneless, skinless chicken breasts
  • salt and pepper, to taste
  • 1 tablespoon olive oil
  • 5 cloves garlic, finely minced
  • 1-pint red grape tomatoes halved lengthwise
  • 1-pint yellow grape tomatoes halved lengthwise
  • 1 tablespoon balsamic vinegar
  • 16 whole basil leaves (chiffonade)
  • 1-pint bocconcini mozzarella balls
  • Salt and black pepper to taste

Instructions:

  1. Season chicken breasts on both sides with salt and pepper.
  2. Toss oil, garlic, tomatoes, vinegar, basil, and mozzarella balls. Season to taste.
  3. In a skillet over medium-high heat - add olive oil. Place chicken breasts top side down and sear for 8 minutes, reducing heat to medium.
  4. Flip chicken breasts over and continue cooking for another 8-10 minutes until cooked through and an internal thermometer reaches 165 degrees F.
  5. Remove chicken from pan and place in serving platter. Rest for 5 minutes.
  6. Top with Caprese salad and enjoy. Also great with your favorite baguette.
