Chicken Meatballs and Tomato Sauce

What to do with that ground chicken (or turkey) staring at your in your fridge? Here’s a quick, tasty and family friendly dish that you can make in 30 minutes or less. I developed this recipe when I was working as a personal chef. I had a client who requested their family chicken meatball recipe quite often. It was a family favorite and delicious. From their recipe, I adjusted it a bit to my liking and I came up with the following recipe.

Chicken Meatballs with Tomato Sauce

Chicken Meatballs with Tomato Sauce

If you're looking for something to do with that ground chicken (or turkey) in your fridge, this is a great recipe.

Ingredients:

  • 1/2 yellow onion, small dice
  • 2 T olive oil
  • 1 garlic clove, minced
  • 1- 28 oz can whole peeled tomatoes, preferably San Marzano's
  • 1 tsp dried basil or 1/4 cup fresh, julienned
  • 1 lb ground chicken (or turkey), not extra lean
  • 1/2 plain breadcrumbs
  • 1 T dried oregano
  • 1 T dried basil
  • 1/2 tsp dry mustard
  • 1/4 cup Parmesan, grated
  • 1/4 cup Italian parsley, chopped plus more for garnish
  • 1/2 tsp kosher salt and black pepper

Instructions:

  1. In a medium saucepan, heat oil over medium-high heat. Add onions and reduce heat to medium-low. Sweat onions until translucent but not brown.
  2. Meanwhile, empty tomatoes into a large bowl. Using an emersion blender stick, puree the tomatoes until desired consistency. Alternatively, puree in a blender.
  3. Add minced garlic to the onions and continue cooking for one minute.
  4. Add tomatoes and basil to the onions. Simmer for 10 minutes.
  5. Meanwhile, combine all of the remaining ingredients. Mix to combine being careful not to overs, this will cause the meatballs to be dense. Roll meatballs into 1 1/2" balls and set on a plate.
  6. To the simmering sauce, add the meatballs one at a time, making sure they are all submerged in the sauce. Simmer for 15 minutes.
  7. Turn off the heat and season to taste. plate the meatballs in your favorite serving dish. Garnish fresh parsley (or basil if you have extra). Serve with cooked pasta, quinoa, rice, or alone.

Notes:

Toss with your favorite long pasta or spaghetti squash, or simply enjoy on its own.
